The roasting process can be divided into three main stages: drying, development and final roast. It is a crucial stage, since insufficient drying can lead to a sour, immature flavour.

The second stage is development, in which the beans begin to darken and develop more complex aromas. During this stage, the Maillard reaction takes place, a series of chemical reactions between sugars and amino acids that creates coffee's caramelised, roasted flavours. Precise control of time and temperature at this stage is essential to avoid over-extracting the sugars, which could lead to a burnt or bitter taste.

Finally, in the final roast stage, the beans reach their full aromatic maturity. Roasters must decide when to stop the roast to achieve the desired profile: a lighter roast will bring out fruity and floral notes, while a darker roast will develop more intense, full-bodied flavours.
